The AMAZING BODY CHALLENGE at Bodies By Badger is going so well. Getting together with the girls to cook a healthy meal each week is so much fun! Preparation is key to hitting your goals, friends!

This week we decided to make a quick and easy comfort food recipe. The bonus? It's SUPER HEALTHY!

This Sweet Potato Chicken Stew is even better the next day or the day after! And it makes a great take to work meal too.

Here is the recipe we followed:

Sweet Potato Chicken Stew Recipe: Makes 4 servings.

2 tbsp evoo
1 sweet onion, chopped
2 cloves garlic, minced
2 cups reduced sodium chicken broth
1 can diced tomatoes, drained
1 can cannelloni beans, drained
1 tsp smoked paprika
2 sweet potatoes, peeled and cut into cubes
2 cups shredded rotisserie chicken
1/3 tsp salt
1/4 tsp pepper
2 tbsp chopped parsley

In a large pot over medium-high heat. Add onion and cook for 3 minutes or until soft. Add garlic and cook 1 minute. Stir in broth, tomatoes, beans, paprika. Raise heat to high and bring to a boil. Add sweet potatoes, cover, and reduce heat to low. Simmer 10 minutes or until potatoes are tender. Add chicken and simmer until heated. Add the salt and pepper. Ladle into bowls and sprinkle with parsley.
