I have a confession to make. Last night while my boyfriend was preparing me dinner, I put on Christmas music. I can't help it! With Free the Z next week, I am starting to get into the holiday spirit! Nothing is cozier to me than listening to Christmas music while lounging around the house in my pajamas with a glass of wine, the dog at my side and my sweet boyfriend cooking me dinner. Last nights menu? White Bean Fennel Soup! This recipe was suppose to be a Crock Pot soup but we just did it on the stove top! It was warm, healthy and super yummy! Looks good, right??? Follow this recipe below and enjoy for yourself!

White Bean Fennel Soup

1 tbsp. olive oil

1 large onion, chopped

1 small fennel bulb, sliced thin

5 cups fat-free chicken broth

15-oz can of cannellini beans, rinsed and drained

14.5-oz can of diced tomatoes, undrained

1 tsp. dried thyme

1 tsp. black pepper

1 bay leaf

3 cups chopped fresh spinach

Saute onions and fennel in oil in skillet until brown. Combine onions, fennel, broth, beans, tomatoes, thyme, pepper and bay leaf. Bring it all to a boil. Reduce to a simmer for 30 minutes. Add spinach before serving.
